From Empanada Filling to Four New Creations: The Story Behind Ciampo Cooks Chipotle Chicken Dip
Anthony CiampoShare
Sometimes the best food ideas aren't created in a test kitchen.
Sometimes they're created because you're hungry, you open the refrigerator, and you start experimenting.
That's exactly how the Ciampo Cooks Chipotle Chicken Dip was born.
What started as the signature filling for our chicken empanadas turned into something completely unexpected—a versatile, smoky, creamy chicken mixture that worked beautifully not just inside an empanada, but spread on crackers, baked onto pizza, and melted into an incredible chicken sandwich.
And that's when we realized:
This isn't just empanada filling.
It's an ingredient with a lot more possibilities.
It All Started With Our Chicken Empanadas
The original recipe was developed as the filling for our chicken empanadas.
The combination is simple but incredibly flavorful: tender chicken combined with cream cheese, cotija cheese, Oaxaca cheese, and smoky chipotle seasoning.
The goal was to create a filling that would be rich and creamy while still having enough smoky heat and personality to stand up inside a perfectly baked empanada.
The empanadas became the original home for the recipe.
But then came one hungry afternoon.
The Accidental Chipotle Chicken Dip
I was hungry and wanted something simple—cheese and crackers.
There was just one problem.
I was out of cheese.
Then I remembered that I had a container of our chicken-and-chipotle empanada filling sitting in the refrigerator.
So I pulled it out.
I divided the filling between two bowls. I left one cold and heated the other in the microwave.
Then I grabbed some crackers and started spreading.
The cold filling was surprisingly good.
The warm filling?
Even better.
The creamy cheeses softened beautifully, the chicken gave the dip some substance, and the smoky chipotle flavor came through in a completely different way than it did inside an empanada.
That's when the lightbulb went on.
Why couldn't we sell this as a dip?
And that's how our Chipotle Chicken Dip began.
Invention #1: Chipotle Chicken Dip & Crackers
This might seem obvious now, but it was actually the discovery that started everything.
The filling works both hot and cold, making it incredibly versatile.
Serve it cold with crackers for an easy snack.
Warm it up and serve it as a hot appetizer.
Put it out at a party.
Bring it to a game-day gathering.
Or keep a container in the refrigerator for when you want something flavorful without having to cook an entire meal.
It's the same flavor profile that made our chicken empanadas popular, just in a completely different format.
Invention #2: Chipotle Chicken Pizza
The next discovery happened because we had some filling left over after filling an order of empanadas.
There was approximately eight ounces remaining.
Instead of letting it sit in the refrigerator, I decided to experiment.
I took some proofed pizza dough and spun it out.
Then I spread the leftover chipotle chicken filling across the dough.
Next came shredded Monterey Jack and sharp cheddar.
Into the oven it went.
And when it came out?
WOW.
The creamy chicken filling became part sauce, part topping, and part cheese layer. The chipotle brought smoky flavor while the melted cheeses tied everything together.
It was one of those combinations where you take the first bite and immediately think:
Why haven't we been doing this all along?
The result was essentially a smoky, creamy chipotle chicken pizza built around the same filling we originally created for empanadas.
Invention #3: The Chipotle Chicken Melt
Then came the sandwich.
And this one may be my favorite.
Yesterday, I took two large slices of fresh scali bread.
On one slice, I spread our chipotle chicken filling.
On the other, I layered thin slices of grilled chicken breast, generously shingled across the bread.
Then I put both slices face-down in a hot, well-buttered frying pan.
The bread started to toast.
The butter sizzled.
And as the filling heated up, the cream cheese, cotija, and Oaxaca cheeses began melting together.
Once the bread was beautifully toasted, I assembled the sandwich and pressed it down into the hot pan.
Then I flipped it and did the same thing on the other side.
And that's when the kitchen started smelling incredible.
The smoky chipotle aroma filled the house.
The buttery scali bread was crisp and golden.
The melted cheese stretched over the grilled chicken.
And the creamy chipotle filling brought everything together.
It wasn't just a chicken sandwich anymore.
It was a Chipotle Chicken Melt.
Invention #4: The Original Chicken Empanada
And of course, we can't forget where this whole story started.
The chicken empanada is still the original.
The same filling that works on a cracker, on pizza, and inside a grilled sandwich was created to be tucked inside our handmade empanadas.
That's what makes this recipe so interesting.
It's not a sauce.
It's not simply a cheese spread.
It's not just shredded chicken.
It's a combination of chicken, creamy cheeses, and smoky chipotle flavor that can be transformed depending on how you use it.
One Product. Four Completely Different Experiences.
That's what we love about this product.
You can start with the same Ciampo Cooks Chipotle Chicken Dip and end up with something completely different depending on what you're making.
Crackers:
Keep it cold for a quick snack or heat it for a warm appetizer.
Pizza:
Spread it over pizza dough, add Monterey Jack and sharp cheddar, and bake.
Chicken Melt:
Add it to grilled chicken and toasted scali bread for a rich, smoky sandwich.
Empanadas:
Use it as the original filling and bake it inside an empanada shell.
And we're pretty sure there are plenty more ideas waiting to be discovered.
Why We Love Creating Food This Way
At Ciampo Cooks, we're always looking for ways to make food more interesting without making it unnecessarily complicated.
Sometimes that means developing a new recipe.
Sometimes it means taking something we already make and looking at it differently.
The Chipotle Chicken Dip is a perfect example.
It started as a filling.
A hungry afternoon turned it into a dip.
A leftover eight ounces turned into a pizza.
And a refrigerator experiment turned into a seriously good chicken melt.
Four creations from one product.
And we're not finished yet.
What's Next?
That's the fun part.
We're still experimenting with our Chipotle Chicken Dip.
Could it become a stuffed baked potato?
A quesadilla?
A breakfast scramble?
A loaded French fry topping?
A pasta sauce?
We're not ruling anything out.
Because sometimes the best new food inventions start with something you already have in the refrigerator.
And sometimes all it takes is a little hunger and a willingness to experiment.
